I love my food mill and so do my Italian neighbors. They are always coming over to my house to borrow my electric food mill. We use it primarily to make our tomato sauce. During the summer, we cook with fresh tomatos which are much different than the ones in the states. Before we place them in the food mill, we cook it for a little while in order to soften it up. This way it's easier for the food mill to separate the skin and seeds. It might be a pain in the rear, but the final product is fabulous. If you don't want to bother with fresh tomatos, then I suggest purchasing canned tomatos (preferably Ciro). That way they are already soft and ready to be put through the food mill. The only problem I have with this electric food mill is the outragous price...
Description of Kenwood KP-102 Electric Food MillThe Kenwood KP-102 unique electric fruit and vegetable mill is ideal for making soups, preserves, baby foods, and sauces and for pureeing all soft-cooked fruits and vegetables. The nondegradable stainless steel compression plate adds durability and strength. A food mill earns its place in a well-equipped kitchen by providing far more control over food texture than does a food processor, blender, or mixer. Hand-cranked mills, however, can be balky, a problem Kenwood solves by electrifying the machine. With this mill, all it takes is a push of a button to purée tomato sauce, produce smooth or chunky apple sauce, cream cauliflower soup, create fresh baby food, and mash potatoes without creating a starchy mess. While some plastic mills can be flimsy, this one is sturdy: it's made of thick heat- and impact-resistant plastic. The blade and three discs (each with different-size screens) are stainless steel and retain their sharp edges indefinitely; the bowl snaps into place and releases with the push of two buttons on the handgrip. A plastic spatula comes with the mill. Bowl, blades, discs, and spatula are dishwasher-safe. --Fred Brack
